Crispy Perfection
I’ll never forget the best grilled cheese advice I ever received. One of my culinary instructors swore by always using mayonnaise instead of butter to toast your grilled cheese. This sounds a little funny, but it is the key to the most delicious grilled cheese!! Be sure to use the mayonnaise! Also, nobody wants to bite into a grilled cheese where the cheese isn’t fully melted, or where the cheese is melted but the bread is too charred. Grate your cheese so it melts easier, as well as use a medium- low cooking temperature. I use my temperature controlled panini press for this. The difference between your basic childhood grilled-cheese and the adult meal you could order at a restaurant is the cheese you put inside. Buying quality cheese, like gouda and aged cheddar, may seem a bit extra for a grilled-cheese at first, but remember, these ingredients keep well and are good for many sandwiches or dishes in the future.

Everyone knows peanut butter and jelly belong together, but you’re really lucky if you understand the relationship between apple and gouda. The apple addition to this grilled-cheese is a game changer. Be sure to slice your apples thin rather than the typical crescent moon shaped cuts as it greatly enhances the texture of your sandwich. I’ve tried it both ways and not only is it easier to bite into thin, but the flavor ratio is just right in every bite.

Ingredients
- 2 slices sourdough bread
- 4 apple slices 1/8 inch thick (I like to use Granny Smith)
- 1 oz grated cheddar cheese
- 1 oz grated smoked gouda
- 1 slice bacon cut into bite size pieces
- 2 large sage leaves cut into thin ribbons
- mayonnaise
Instructions
- Cook bacon according to package instructions until desired texture. Slice the apple on a mandolin or make thin round cuts starting from the end of the apple into the center. Cut Sage leaves into thin ribbons by rolling the leaves horizontally and then cutting strips.
- Place cheeses on the bread. Top with apple slices, bacon, and sage.
- Spread mayonnaise on outer sides of the bread for toasting.
- Cook on medium-low heat until lightly golden brown on each side and the cheese is all the way melted.
- Eat immediately and enjoy!

I was a little unsure with the apples at first but I was pleasantly surprised. Definitely agree that thinner slices are better. The first one I made the slices were too thick; I got it right the second time!
