Bread
Quality french toast begins with quality bread. I always opt for brioche or challah bread as these are both soft breads that absorb moisture well. I recommend avoiding a pre-sliced loaf of bread; french toast is much better with thick slices! Because it can be difficult to find brioche or challah bread in some states you may not have the luxury of finding an unsliced loaf. In western states it seems like pre-sliced brioche is relatively common so I sometimes find myself getting creative by “gluing” two slices together in order to achieve the desired thickness. This can be accomplished stacking two slices on top of each-other, dipping them in the egg mixture, coating them in corn starch, and then cooking them still stacked as if they were one piece.
Caramel Sauce
Personally, I love to drizzle my homemade caramel sauce over my thick toast and apples. The sweet, deep caramel flavor accents the natural apple tart and penetrates deeply into the soft, warm center of the french toast. For some people, like my husband, the only way to eat this dish is with good old fashion maple syrup. Honestly, both toppings make for an excellent treat!
Make The Night Before
This recipe tastes better when it soaks in the egg mixture over night. It guarantees a perfectly moist result every time. When prepared properly, the center of the french toast will resemble a sweet, creamy custard. Prepping the night before also lightens the work load in the morning ensuring easy cooking!
Frying Tips
When frying your french toast in oil (or anything for that matter), it is important to check the temperature of your oil before cooking. If the temperature is too cool or warm it can adversely affect your french toast. As a general rule of thumb, 350 degrees F is the standard temperature for frying oil. Ingredients
- 4 (1.5 inch thick) slices of Brioche or Challah Bread
- 1 apple sliced and cored (I prefer granny smith)
- 2 cups corn starch
- High heat oil for frying (vegetable, canola, sunflower, etc)
- Tongs
- 9x13 rectangular baking dish
- deep cast iron skillet or pot for frying
For the Egg Soak:
- 1/4 cup Buttermilk
- 1/4 cup Milk
- 2 eggs
- 1/4 cup sugar
- 1/2 teaspoon nutmeg
- 1 teaspoon cinnamon
Instructions
- Whisk together buttermilk, milk, eggs, sugar, nutmeg, and cinnamon. Pour into baking dish. Allow both sides of bread to soak up some of the mixture then cover the pan and refrigerate overnight. I also like to prepare my caramel sauce the night before. (click here for recipe)
- In the morning, begin heating up your oil (enough for 3/4 of the bread to be submerged) The oil needs to be at 350 degrees F. Hot enough where it bubbles when the bread is immersed, but not smoking. (Click here for deep fry thermometer link.)
- Place the corn starch on a large plate, then fully coat the slices of bread in the corn starch. Prepare a sheet tray lined with paper towels for the bread to land on after cooking.
- When the oil is to temperature, slowly drop your bread in the oil using your tongs. Fry til golden then flip and repeat on the other side. Transfer to lined sheet tray (see note 1 if making more than 1x recipe). I fry 2 slices at a time. Repeat for all bread slices.
- Heat up your caramel sauce. Once all the bread slices are fried, drop the apple slices in the oil just long enough to soften the outside.
- Serve french toast with apple slices and caramel sauce. Enjoy (:
Notes
- Remember, this recipe tastes best when served immediately. If you are making a lot of french toast I recommend keeping your cooked slices in your oven at 200 degrees F, while you continue to fry the rest. However, be sure to not line your tray with paper towels (fire hazard!).
