Strawberry Salsa Produce
Tomatillos might sound a little foreign to you but if you’ve enjoyed Salsa Verde, odds are it had tomatillos in it. They are also known as the “Mexican Husk Tomato”. Tomatillos are a bit more acidic than tomatoes as well as a little less sweet, making them slightly tart. While individually the flavor may seem unimportant, they really tie together the flavors in this salsa. Picking ripe tomatillos is as simple as opening them up. Open up the husk just slightly to peek at the fruit. The tomatillo should be firm and bright green. Toss the fruit back if it looks dried out, or blemished.
This Strawberry Salsa works well with yellow or white corn. Although, yellow will add more sweetness to it than white. When picking corn it should be full with plump kernels. Look for husks that are bright green in color, and slightly damp. Avoid husks that are yellow or dry.
Strawberries are sweeter the deeper the shade of red. Look for strawberries that are dry, plump, and firm. The caps should be green and fresh looking. Avoid bruised or mushy strawberries.

Ingredients
- 1 ear corn grilled or seared on cast iron
- 2 cup strawberries hulled and diced
- 1 jalapeno finely diced
- 1/2 cup red onion finely diced
- Juice and zest of 1 lime
- 1/4 cup rough chopped Cilantro
- 1 cup Tomatillos finely diced
Instructions
- Cut corn off the cob
- Mix all ingredients together.
- Finish with lime juice, lime zest, and season with salt and pepper to taste.
Notes
- If it is too spicy for you, add a teaspoon of warmed honey, or sugar to balance it out.
