1 lb dried pinto beans (2 cups)
3 cups chicken stock
4 cups water
1 onion chopped
1 teaspoon salt
1 teaspoon ground cumin
1/2 teaspoon smoked paprika
1/4 teaspoon chili powder
1 teaspoon dried cilantro
1 tablespoon minced garlic
1 tablespoon chopped green chiles
4 thick strips bacon diced
Instructions
Rinse the dried pinto beans under water to remove dirt and debris. Pick out any rocks etc. Drain and set aside.
Set your instant pot to the sauté setting. Sauté diced onions until the raw smell is gone, then add in the diced bacon. Once the bacon is almost fully cooked, add in the minced garlic and sauté until the raw smell is gone.Turn off the sauté setting and immediately add in liquid and seasonings.
Cover the pot, lock the lid and make sure the sealing valve is closed.
Select the bean setting for 45 minutes.
After cooking allow it to sit and vent for 20-25 minutes before removing the instant pot lid.
Remove the lid and blend the mixture together. Your beans are ready to enjoy.
