Sauce…-Less?
Yep, that’s right. Theres no sauce on this Summer Squash Pizza. I simply rub olive oil as my base with oregano leaves and minced garlic. If you happen to have garlic or oregano oil on hand that will taste even better. This provides enough moisture to the pizza but allows the toppings to shine through.
Summer Garden Favorites
This pizza utilizes summer squash and arugula. The summer squash has a subtle, sweet taste that is delicate. You need to keep this is mind because strong sauce could make the squash flavor vanish entirely. However, if you let the gentle squash flavor shine through, it pairs wonderfully with a combination of creamy savory cheeses. After baking, top the pie off with fresh arugula, adding a slightly bitter bite, pine nuts, and prosciutto. Finally, finish with a little lemon zest. This helps enhance the flavors as well as neutralize the bitterness of the arugula.

Ingredients
1 portion of pizza dough (150 grams) [Click her for New York pizza dough recipe]
1 tablespoon olive oil with 1/4 teaspoon dried oregano leaves and 1/4 teaspoon minced garlic
2 tablespoons parmesan cheese
2 tablespoons shredded mozzarella
2 tablespoons fontina
2 tablespoons ricotta cheese
1 cup thinly sliced yellow squash and zucchini
1 teaspoon pine nuts
1 handful arugula
2 slices prosciutto torn into pieces
1 lemon to zest
Instructions
1. Pre-heat pizza oven according to your pizza oven’s instructions. If using a home oven, preheat to 500 degrees F with a pizza stone inside for at least 30 minutes prior to baking.
2. Dust your pizza peel with flour, then stretch your pizza dough by hand onto the peel.
3. Spread the oil, garlic, and oregano over the dough. Sprinkle parmesan, mozzarella, and fontina cheeses. Place small dollops of ricotta cheese evenly across the pizza. Cover the cheese with sliced squash and pine nuts.
4. Transfer the pizza onto the stone or oven and bake for 8-12 minutes. Crust should be golden and sound hollow when you tap it.
5. Remove from oven and sprinkle with arugula, prosciutto, and lemon zest.
