This wrap started as a way to use up the odds and ends laying around my kitchen โ€” the sad stale loaf staring at you, the leftover grilled chicken from last night’s dinner, and the produce that only has a few days left. This is the kind of recipe that happens naturally from the work you’ve already done earlier in the week, which is exactly what my Pleasant Plan Club is all about.

This Caesar wrap is one of those recipes that feels almost too simple to even have a written recipe for. Leftover bread, leftover chicken, a fridge that needed clearing out โ€” and then you take a bite and remember that using what you already have is its own kind of skill. That’s the whole idea behind my meal plans: each one flows into the next, so today’s dinner sets up tomorrow’s lunch. No wasted food, no extra thinking, just a plan that already knows what’s in your fridge.

How to Roll a Caesar Salad Wrap Like a Restaurant

First, a fresh homemade Sonoran tortilla is going to stretch way better than any store-bought tortilla. That’s half the battle before you even start rolling. Second is a warm tortilla, good filling placement, and keeping a tight roll.

Fold the left and right sides inward over the filling, then bring the bottom edge up and completely over the filling.

Here’s the restaurant trick:

Finish seam-side down so the weight of the wrap holds it closed on its own. Let it sit seam-side down for 30 seconds before cutting, this will give the tortilla a second to set around the filling.

To feel fancy (and I swear something about this step makes it taste better): after rolling, wrap it tightly in parchment, deli paper, or foil, twisting or folding the ends like a candy wrapper. Let it rest for a minute, then cut straight through the paper at a sharp diagonal.

What you’ll need

Flour Tortillas

A fresh tortilla makes a HUGE difference from a mediocre wrap to a crave-worthy one! I HIGHLY recommend making the tortillas. Even if you freshly make them a day or 2 in advance it will still be so much better than store bought.

Grilled Chicken

Chicken is pretty classic in a Caesar Salad Wrap. But feel free to use whatever meat is leftover from yesterday’s dinner or grill it fresh.

Traditional Ceasar Dressing

Recipe listed below- it does call for Anchovies . But I promise its not what you think! It adds a umami taste that enhances the other flavors rather than a fishy taste. You don’t even know its in there.

Sourdough Bread

For toasting pine nuts โ€” dry, no oil, medium heat. Watch them closely; they go fast.

Romaine Lettuce

I think this is self explanatory for a salad wrap.

Cherry Tomatoes

Go for a locally grown one for best flavor. Sensei here in Hawaii is delicious. I also love Flavor Bombs.

Ingredients

For the Buttery Sourdough Croutons

  • 4 cups day-old sourdough bread crust cut off and diced into cubes
  • 3 โ€“4 tablespoons olive oil
  • Flakey Salt to taste
  • Freshly cracked black pepper to taste

For the Traditional Caesar Dressing

  • 2 large egg yolks room temperature*
  • 2 โ€“4 anchovy fillets mashed into paste with whisk (or 1โ€“2 teaspoons anchovy paste)
  • 2 cloves garlic finely grated
  • 2 teaspoons Dijon mustard
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Worcestershire sauce
  • ยฝ teaspoon kosher salt plus more to taste
  • ยผ teaspoon freshly ground black pepper
  • ยฝ cup neutral oil grapeseed, avocado, or light olive oil
  • ยผ cup extra virgin olive oil
  • ยพ cup finely grated Parmigiano-Reggiano

For the Wraps

  • 4 large flour tortillas
  • 2 โ€“3 romaine hearts chopped
  • 2 cups grilled chicken breast diced or sliced
  • 1 cup cherry tomatoes halved
  • 1 batch Buttery Sourdough Croutons
  • Shaved or grated Parmigiano-Reggiano
  • Caesar dressing plus extra for serving

Instructions

Step 1: Make the Croutons

  • Heat the olive oil in a large skillet over medium-low heat. The goal is gentle, steady heat that never reaches the smoke point, allowing the bread to become crisp and buttery all the way through.
  • Drop the sourdough cubes in and flip occasionally until golden. The goal is crsipy on the outside and soft in the interior.
  • Season with kosher salt and freshly cracked black pepper while still warm. Transfer to a plate and allow to coolโ€”they’ll continue to crisp as they cool.

Step 2: Make the Caesar Dressing

  • Mash the anchovies and grated garlic together into a smooth paste in a medium bowl.
  • Whisk in the egg yolks, Dijon mustard, lemon juice, Worcestershire sauce, salt, and pepper until smooth.
  • While whisking constantly, slowly drizzle in the neutral oil until the dressing emulsifies and begins to thicken.
  • Continue whisking while slowly adding the olive oil.
  • Stir in the Parmigiano-Reggiano until fully incorporated.
  • Taste and adjust with additional lemon juice, Parmesan, or salt as needed. If you’d like a thinner dressing, whisk in 1โ€“2 tablespoons of cold water.
  • Refrigerate for 30 minutes before using to allow the flavors to meld.

Step 3: Assemble the Wraps

  • Warm each flour tortilla over a gas burner or in a dry skillet for 15โ€“20 seconds per side, just until pliable.
  • Toss the chopped romaine with the dressing and lay the salad on the tortilla in a compact horizontal rectangle just below the center, not in the dead center. Leave about 2 inches clear on each of the sides and plenty of empty tortilla above the salad.
  • Top with:
  • Grilled chicken
  • Cherry tomatoes
  • A generous handful of buttery sourdough croutons
  • Shaved Parmigiano-Reggiano
  • Finish with another drizzle of Caesar dressing if desired.
  • Fold the sides inward, then roll tightly from the bottom up, burrito-style. I prefer to then wrap it in wax paper.
  • Slice in half and serve immediately.

Notes

Make Ahead: The Caesar dressing will keep refrigerated for up to 4 days.
Bread Tip: Day-old sourdough makes the crispiest, most flavorful croutons, but any sturdy artisan loaf works well.
Turn It Into a Salad: Skip the tortillas and toss the romaine, chicken, tomatoes, croutons, Parmesan, and dressing together for a classic Chicken Caesar Salad.
