Passion Fruit Fizz Mocktail

Ingredients

  • 1 cup passion fruit puree, I use Monin
  • cups pineapple juice
  • 1/4 cup freshly squeezed lime juice, about 2-3 limes
  • 3 cups sparkling water or club soda
  • Ice for serving
  • Fresh mint leaves for garnish
  • Lime or pineapple slices for garnish

Instructions
 

  • Add the passion fruit syrup, pineapple juice, and lime juice to a large pitcher. Stir well.
  • Allow the mixture to chill in the refrigerator until it is time to serve.
  • Just before serving, add the sparkling water or club soda and stir gently.
  • Add ice to glasses, pour over the mocktail, and garnish with mint and slices of fruit.

Notes

Check the base and then chill it. Passion fruit syrups can be sweeter or less sweet, and your limes can be tangier or less tangy according to the season. When it is sickly sweet, more lime makes it better. Should it be sharp, then a little more splash of puree smooths the edge, or a bit of honey can be added. This is a low-maintenance recipe.
And, in case you have any base left (no longer with the sparkling water), it can be stored in the fridge for up to three days. Just add a new fizz every time you pour.
