The sparkling water goes in last, right before guests arrive, and that’s the whole trick. Everything else is done. You’re not hovering. You’re just pouring.

A word on the syrup

I use Monin passion fruit puree. It is easy to find and does not taste artificial. It is available in most grocery stores or on the Internet. A single bottle can serve a large group of people, making this recipe surprisingly cost-effective as well.

Should you wish to make your own passion fruit puree, go for it. But on a busy hosting day? Pre-made is the way to go!

Adjusting to your taste

Taste the base before you chill it. A lot of passion fruit puree is sweeter than others, and your limes will be more or less sour, depending on the season. Should it be too sweet, add an additional squeeze of lime. Should it be sharp, a little more syrup softens the edge. This is a forgiving recipe.

And when there is a quantity of base left over (not with the sparkling water), it lasts up to three days in the fridge. Put in a new fizz with every pour.

Ingredients

Ingredients:

  • 1 cup passion fruit puree, I use Monin
  • cups pineapple juice
  • 1/4 cup freshly squeezed lime juice, about 2-3 limes
  • 3 cups sparkling water or club soda
  • Ice for serving
  • Fresh mint leaves for garnish
  • Lime or pineapple slices for garnish

Instructions

  • Add the passion fruit syrup, pineapple juice, and lime juice to a large pitcher. Stir well.
  • Allow the mixture to chill in the refrigerator until it is time to serve.
  • Just before serving, add the sparkling water or club soda and stir gently.
  • Add ice to glasses, pour over the mocktail, and garnish with mint and slices of fruit.

Notes

Check the base and then chill it. Passion fruit syrups can be sweeter or less sweet, and your limes can be tangier or less tangy according to the season. When it is sickly sweet, more lime makes it better. Should it be sharp, then a little more splash of puree smooths the edge, or a bit of honey can be added. This is a low-maintenance recipe.
And, in case you have any base left (no longer with the sparkling water), it can be stored in the fridge for up to three days. Just add a new fizz every time you pour.
